Damn tasty meal! I copied this from a local place called @luckytigersandwich . Mine was pretty good, but nowhere as amazing as the restaurant! You have to try it. The chicken thighs were sous vide for about an hour at 140 then marinated in a mixture of lemongrass, brown sugar, red pepper flake, salt, pepper, shallot, lime juice, fish sauce and garlic. After the sous vide, I cooked the chicken thighs in a @lodgecastiron skillet with the marinade until they reached 150 or so.
