This Keto French Onion Zoodle Bake is a low-carb twist on the classic French onion casserole. With caramelized onions, flavorful herbs, and gooey Gruyere cheese atop spiralized zucchini noodles, it's a satisfying dish for any occasion.
Ingredients: 2 large zucchinis, spiralized. 2 tablespoons olive oil. 2 large onions, thinly sliced. 2 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. 1 cup beef broth. 1 cup shredded Gruyere cheese. Salt and pepper to taste.
Instructions: Before you start cooking, heat the oven to 375F 190C. Warm up a big pan with olive oil over medium-low heat. It will take about 20 minutes of cooking after adding the onions until they turn caramelized. To the pan, add minced garlic, thyme, and rosemary. Go on and cook for two more minutes. Add the beef broth to the pan and let it cook for about 5 minutes, or until it has slightly reduced in size. Put half of the spiralized zucchini in a baking dish and layer it up. Put half of the onion mix and half of the shredded cheese on top. Add more layers with the rest of the cheese, onion mixture, and zucchini. Put foil over the baking dish and bake for 20 minutes. Now take off the foil and bake for another 10 minutes, or until the cheese is bubbly and golden brown. Enjoy while hot!
