Week 8 (Winter 2016)
This was Mousse cake week, and also the first week of our Production class. The only picture I snagged there was of the big spiral mixer we used because we were on the bread station that week.
We made a Passionfruit Mango Mousse cake with kiwi jam, coconut dacquois, patterned biscuit jaconde, and a passionfruit glaze (delicious frozen treat with wacky Saved by the Bell colours), and a Dulce de Leche Mousse cake with chocolate lady fingers, caramel glaze, milk chocolate and peanut gianduja, grand marnier saboyon, sauteed apples, and chocolate decorations.
I remember this being a pretty tedious week with lots of individual steps, but the end result was very pretty.
