This chicken and dumplings recipe is quick and easy to make in the Instant Pot. Chicken that is tender, vegetables, and fluffy dumplings in a tasty broth.
Ingredients: 1 lb chicken breast, diced. 4 cups chicken broth. 1 cup diced carrots. 1 cup diced celery. 1 cup diced onion. 2 cloves garlic, minced. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 1 cup frozen peas. 1 cup all-purpose flour. 2 tsp baking powder. 1/2 tsp salt. 1/2 cup milk. 2 tbsp melted butter.
Instructions: Place diced chicken, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper into the Instant Pot. Close the lid and set the Instant Pot to Manual mode for 8 minutes on high pressure. Once cooking is complete, perform a quick release, then open the lid and stir in the frozen peas. In a separate bowl, mix together flour, baking powder, salt, milk, and melted butter to form a dough. Drop spoonfuls of the dough into the Instant Pot, on top of the chicken and vegetable mixture. Close the lid and set the Instant Pot to Manual mode for 5 minutes on high pressure. Once cooking is complete, let the pressure release naturally for 5 minutes, then perform a quick release. Serve hot and enjoy!
