To try and put this simply:

Ink as a Guardian is in charge of ensuring the scripts written by the Stars (us) remain intact.

Said script for Fracturedtale ends at the destruction of Sheriff's world as it is a world that the Stars have supposedly scrapped, therefore Ink does not expend his energy into helping Sheriff. He has active scripts to protect.

Sheriff on the other hand couldn't care less about what the stars have to say, and he thinks Guardian of the Multiverse isn't a title Ink fully deserves when his priorities are more in line with his own benefits.
