Indian Kettle Corn is a delightful twist on traditional popcorn, featuring the warm flavors of ghee, jaggery, cardamom, and ginger. It offers a sweet and savory snack that's perfect for cozy evenings or festive gatherings.
Ingredients: 1/4 cup popcorn kernels. 2 tablespoons ghee clarified butter. 3 tablespoons jaggery Indian cane sugar. 1/4 teaspoon ground cardamom. 1/4 teaspoon ground ginger. Pinch of salt.
Instructions: Heat ghee in a large pot over medium heat. Add popcorn kernels and cover with a lid. Once the kernels start popping, shake the pot occasionally to prevent burning. While popping, in a separate small saucepan, melt jaggery over low heat until it becomes a syrup. Once all kernels have popped, pour the jaggery syrup over the popcorn. Quickly sprinkle ground cardamom, ground ginger, and a pinch of salt over the popcorn. Mix everything thoroughly until the popcorn is evenly coated with the syrup and spices. Remove from heat and let it cool for a few minutes before serving.
