Yacon Morado. This Andean tuber is one of my favorite plants to grow. I just love the sweet juicy roots so much. No need to cook it: when peeled, sliced, and sprinkled with lemon it is like eating a mouth-watering apple or pear, yet it looks like a sweet potato. This pre-Incan food (’Yacon’ is a Quechua word that means ‘water’ or ‘watery’) was spread by the Incas, who used it as a thirst quencher when traveling, and who continue to eat it in the Capac Raymi festival.
