Going to be that annoying astrology girly and grab the ephemeris of the saturn/jupiter conjunction in Aquarius, which happened in December 2020. Considering it just had happened on Tuesday the 22nd, the Sun was probably in Capricorn (earth), Moon was likely in Pisces (Water) and otherwise Aries (fire), Mercury was in Capricorn (earth), Venus was in Saggittarius (fire), Mars in Aries (fire).
(I could draw up the actual conjunction chart but rough 'n dirty ephemeris check is faster)
I tried to look for all seven in just air signs in 2021, but by the time Sun reaches Gemini, Mars is in Cancer. September 27 2021 has all seven in air except for Venus (Scorpio) and Jupiter leaves Aquarius just before the start of 2022.
