Ingredients: 1 cup rolled oats. 1 cup all-purpose flour. 2 tablespoons sugar. 1 tablespoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 2 large eggs. 1 1/2 cups milk. 1/4 cup melted butter. 1 teaspoon vanilla extract.
Instructions: The rolled oats should be pulsed in a blender or food processor until they become like coarse flour. Mix the all-purpose flour, sugar, baking powder, cinnamon, and salt together in a large bowl. Beat the eggs in a different bowl, then add the milk, melted butter, and vanilla extract and mix them in with a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. A few lumps are fine; don't mix it too much. Warm up your waffle iron and use cooking spray or butter to lightly coat it. Put the right amount of batter on the waffle iron and cook it according to the directions on the box until it's golden brown and crispy. You can top the warm oatmeal cinnamon waffles with maple syrup, fresh berries, or whipped cream, or anything else you like.
