These Chicken Teriyaki Meatballs are a tasty low-carb and paleo dish that would also work well as a keto meal. They are tasty, filling, and easy to make because they are made with ground chicken and a homemade teriyaki sauce.
Ingredients: 1 lb ground chicken. 1/4 cup coconut aminos. 2 cloves garlic, minced. 1 tsp grated ginger. 2 tbsp coconut flour. 1 tbsp sesame oil. 1 tbsp olive oil. 1 green onion, thinly sliced for garnish. 1 tbsp sesame seeds for garnish. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Add coconut aminos, minced garlic, grated ginger, coconut flour, sesame oil, salt, and pepper to a bowl. Mix the ingredients together. Mix well until everything is well mixed. Make small meatballs out of the mixture and put them on a baking sheet lined with parchment paper. Place the meatballs in an oven that has already been heated up. Bake for 20 to 25 minutes, or until they are fully cooked and golden brown. Making the teriyaki sauce will take some time while the meatballs are baking. Put coconut aminos, minced garlic, grated ginger, and olive oil in a small saucepan. For about 5 minutes, cook on medium heat until the sauce gets a little thicker. Take the meatballs out of the oven when they're done and brush them with the teriyaki sauce that you made earlier. Before serving, top the meatballs with sliced green onions and sesame seeds. Enjoy while hot!
