A group of animals that's always captured my imagination is the cetacean family (whales, dolphins, and porpoises). I mean, these animals are basically real life sea dragons that evolved from little land mammals that looked like goat-rats. That's pretty damn cool, if you ask me.
I have a LOT of cetacean books, but the Highsong duology by Laura Jennings (droemar on deviantart) gets lots of points from me for doing Psychic Dolphins in Space, but legitimately cool and well thought-out. They're also novellas, so they're short and sweet.
