A delightful and flavorful bean salad featuring the earthiness of beans, the sweetness of figs, and the burst of freshness from cherry tomatoes. The herbed Parmesan dressing adds a savory kick, making it a perfect dish for Turntable Kitchen gatherings.
Ingredients: 2 cups cooked beans e.g., cannellini or navy beans. 1 cup cherry tomatoes, halved. 1/2 cup dried figs, sliced. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. 1 teaspoon dried oregano. 1 teaspoon dried thyme. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Sliced figs, cherry tomatoes, and cooked beans should all be combined in a big bowl. Mix the olive oil, balsamic vinegar, salt, pepper, dried thyme, and dried oregano in a small bowl. Drizzle the bean mixture with the dressing, then gently toss to coat. Add some grated Parmesan cheese to the beans and mix them together once more. To allow the flavors to meld, let the beans marinate for at least fifteen minutes. Add some fresh basil leaves as a garnish before serving. Enjoy the Herbed Parmesan Beans while they're still room temperature!
