Headcanon.
Regina was made to convert to Judaism upon her marriage to Leopold. Even though she was made to convert she found comfort in it. Learning the traditions and reading about the history of Judaism in the Enchanted Forest provided Regina with a distraction from her miserable marriage. She still held done to her Latin roots and the traditions that Henry Sr. taught her.
When Regina adopted Henry, she raised him with Latin and Jewish traditions. Henry Mills was brought up by a Latina-Jewish mother.
