Ingredients: 2 large zucchinis, cut into 1/2-inch thick slices. 1 cup grated Parmesan cheese. 1/2 cup breadcrumbs. 2 eggs, beaten. 1/2 teaspoon garlic powder. 1/2 teaspoon dried oregano. 1/4 teaspoon salt. 1/4 teaspoon black pepper. Cooking spray or olive oil for greasing.
Instructions: Preheat your oven to 425F 220C. In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, salt, and black pepper. Mix well. Dip each zucchini slice into the beaten eggs, ensuring both sides are coated. Coat the egg-covered zucchini slices with the Parmesan breadcrumb mixture, pressing gently to adhere the coating to the zucchini. Place the coated zucchini slices on a baking sheet greased with cooking spray or olive oil.
