Overnight Vanilla coconut protein chia seed pudding
Makes two servings Prep: 5 min Best if made the night before
1/3 c Chia seeds 1 1/2c milk of your choice, I used unsweetened almond 2 tbsp shredded coconut ½ a scoop of Garden of Life lightly sweetened protein and greens powder (but you can use any protein powder you’d like) Vanilla extract or powder ½ tbsp coconut sugar Mix ingredients in Mason jar or lidded container of your choice, let sit overnight, stir in additional liquid in the morning if needed, top w/maple syrup and coconut, or chopped nuts and fruit. Blend for a smoother consistency but I love it with whole Chia seeds!
