A classic Southern dish, this easy shrimp and grits recipe combines creamy, cheesy grits with succulent shrimp in a flavorful sauce.
Ingredients: 1 cup stone-ground grits. 4 cups water. 1 cup shredded cheddar cheese. Salt and pepper to taste. 1 pound medium shrimp, peeled and deveined. 2 tablespoons butter. 2 cloves garlic, minced. 1 cup chicken broth. 2 tablespoons lemon juice. 2 tablespoons chopped fresh parsley.
Instructions: Bring water to a boil in a saucepan. Turn down the heat and stir in the grits. Stirring every now and then, cook until it gets thick, about 20 minutes. Add cheddar cheese and mix it in until it melts. Add pepper and salt to taste. Take it off the heat and keep it warm. Melt the butter in a big pan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. Put the shrimp in the pan and cook for about two to three minutes on each side, until they are pink and opaque. Add the lemon juice and chicken broth. Bring it to a simmer and cook for about 5 minutes, or until it's a little less thick. Put shrimp and sauce on top of the grits that have been cooked. Add chopped parsley as a garnish. Have fun!
