The thing I love the most in fiction are “hard” characters softening slowly over time and the tiny details that show them getting more comfortable (ex: posture) . What are some things that Grey might start doing without even noticing when they get more comfortable in their relationship?

Grey has many masks that they wear - they are a spider in control of a massive web of lies, deceit, and manipulation. MC is the only one to free themself. Grey is more relaxed, more at ease, because they don’t have to curate a persona around MC - they don’t have to only be Roman, they can be Grey Roman.
I think the biggest change would be touch or just proximity in general. Their body language will be much more relaxed, more inclined towards their person. Quality time is a love language they will discover and it will annoy them on more than one occasion. What do you mean they can’t enjoy this song fully without MC?
They are a selfish person, and the people closest to them -such as their crew - will be the first to notice how selfless they become with and only with MC. Of course Roman has everything about everyone memorized, but MC is the only one they use it for good for - buying favorite foods, investing in a craft or hobby they love. Grey allowing someone else into their home and life? Some might call you crazy.
Another big change, how much less of a pain in the ass holding a decent conversation with GR has become with MC around.
I see touch starved Grey vs affectionate mc and I am yes and-ing. I raise you touch starved grey who is up late working on Plans vs affectionate mc who wants to cuddle to sleep and who isn’t above using pouting, whining, crocodile tears, draping themself over grey like a despairing victorian lady, or any other underhanded method to get grey to go to bed for their rightfully deserved bedtime cuddles

Hmm idk if this has been asked before, but the blind/partially blind (sorry idk if this is the proper term) made me think of it. How would Grey and their crew react to an MC with noise sensitivity? I struggle a lot with loud noises and crowds because of all the sounds around me. What about sensitivity with other senses?

Grey would be much more attentive than those who work for them would be in this situation. They are a loud bunch who aren’t always aware of it. Although they definitely buy a bowl of earbuds like hotels carry for MC.
Grey will start carrying around two sets of headphones or earbuds (whichever MC prefers), a pair for MC and an extra just in case. The sound cancellation does make them a little nervous, and if it wouldn’t drain the batteries on both ends, they would love to keep the MC on a phone call whenever the headphones/earbuds come out in case of an emergency.
Not just for MC’s with noise sensitivity, but Grey would instantly invest in a sensory room if MC expressed interest.
Feel like having a bit of extra comfort today- I’ve been in bed all day with a migraine. How would Grey be with a MC who without saying anything just plops their head in their lap? (Definitely in deep relationship territory).
Love this IF Grey is the definition of me being colourblind lol. Definitely in my top 10 IF ROs so far.
It definitely surprised them the first time, but now they understand what the look in MC’s eyes, the slight twist in their expression, or simply overall vibe, means.
Grey loves it, although they will complain of the complete opposite if they’re working on something. They would be content to sit exactly in that spot for eternity if time would let them, still, they will ask if MC wants any painkillers, something to eat, or something to drink. MC’s comfort will always come before their indulgence.

Grey has a mind for picking up languages, so I see them taking the opportunity to learn MC's and running with it. Not only can MC and them talk in front of others without them understanding (which they will definitely be taking advantage of) but they get to connect with MC in a way most don’t which they love the most.
