So I just came up with a recipe for dairy-free cheeseburger mac that can easily be converted into an all vegetarian dish!
This was completely on accident but the resemblance is so uncanny. I threw a few of this week’s leftovers together — zucchini, broccoli, and half of a turkey burger patty — along with some cavatappi pasta noodles, chopped onion & garlic, mushrooms, a little shredded coconut, and lemon juice. For my seasoning blend, I used turmeric, cumin, black pepper, no sodium creole seasoning, onion & garlic powder, paprika, hot honey seasoning, and salt.
I sautéed my veggies, diced turkey burger patty, lemon juice, and seasonings in one pot. Then, I tossed in the noodles along with a little of the pasta water and let it simmer until the liquid cooked down. I was really surprised how tasty this turned out 😋 The noodles were actually creamy as if they had been coated in a cheese sauce. The shredded coconut and hot honey seasoning brought a hint of sweet heat to the dish.
