Do you add all the sugar at once? Because my macaron recipe says to add one teaspoon at a time and make sure all the sugar is mixed in before you add another spoon

My recipes always say three portions or steady stream! But I will try it out sometime! I hope this will work better, because I get soft peaks at most....
