This Healthy Szechuan Chicken recipe offers a nutritious twist on the classic dish. Lean chicken breast strips are marinated in a flavorful blend of soy sauce, rice vinegar, and aromatic spices, then stir-fried with vibrant bell peppers for a burst of color and nutrition. The dish is finished with a light, glossy sauce, making it both delicious and health-conscious.
Ingredients: 500g boneless, skinless chicken breast, cut into strips. 2 tablespoons soy sauce. 1 tablespoon rice vinegar. 1 tablespoon sesame oil. 2 cloves garlic, minced. 1 teaspoon ginger, minced. 2 tablespoons Szechuan peppercorns, crushed. 1 tablespoon honey. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 tablespoon cornstarch. 2 tablespoons water. 2 green onions, sliced for garnish. 1 tablespoon sesame seeds, for garnish.
Instructions: In a bowl, mix together soy sauce, rice vinegar, sesame oil, minced garlic, minced ginger, crushed Szechuan peppercorns, and honey. Add chicken strips to the marinade and let it sit for 30 minutes in the refrigerator. In a separate bowl, mix cornstarch and water to make a slurry. Heat a tablespoon of oil in a skillet over medium-high heat. Add marinated chicken strips and stir-fry until cooked through, about 5-6 minutes. Add sliced bell peppers to the skillet and cook for another 2-3 minutes. Pour in the cornstarch slurry and stir until the sauce thickens, about 1-2 minutes. Garnish with sliced green onions and sesame seeds before serving.
