Ingredients: 8 large sea scallops, thawed if frozen. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 tablespoon fresh ginger, grated. 1 red chili pepper, thinly sliced. 2 tablespoons lime juice. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: Pat scallops dry with paper towels and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add scallops to the skillet and sear for 2-3 minutes on each side until golden brown and cooked through. Remove scallops from the skillet and set aside. In the same skillet, add minced garlic, grated ginger, and sliced chili pepper. Cook for 1-2 minutes until fragrant.
