This drink is sweet from ripe mangoes, sour from fresh ginger, and refreshing from the lemon juice and ginger.
Ingredients: 1 ripe mango, peeled and diced. 2 tablespoons grated fresh ginger. 1 cup freshly squeezed lemon juice. 1/2 cup granulated sugar. 4 cups cold water. Ice cubes. Lemon slices and mint leaves for garnish.
Instructions: In a blender, combine diced mango, grated ginger, lemon juice, and granulated sugar. Blend until smooth. Strain the mixture through a fine-mesh sieve into a pitcher to remove any pulp. Add cold water to the pitcher and stir well to combine. Taste and adjust sweetness if necessary by adding more sugar. Refrigerate until chilled, about 1 hour. Serve the mango ginger lemonade over ice cubes, garnished with lemon slices and mint leaves.
