Para harmonizar com a culinária oriental moderna do novo @Kanu.Sushi hoje fui de Riesling alemão! Este é o “Baron K 2017” da @WeingutBaronKnyphausen — um Riesling Kabinett do Rheingau 🇩🇪, fermentado em tanques de inox e maturado em grandes tonéis. 🍷 Na taça, coloração amarelo palha bem clara. Os aromas são intensamente florais e frutados (melão doce, líchia e lima-da-pérsia) com toque petroláceos leves (resina e thinner). Em boca tem médio dulçor, bem equilibrado pela acidez elevada, e corpo medio-. Este foi meu vinho preferido entre os degustados na “Semana Riesling” da @Vindame.Vinhos, que rolou na @ABS_Campinas na última terça. . O “Wiltinger 2017” é um delicioso Riesling “trocken” (seco) alemão da categoria “VDP Ortswein”, produzido pela belíssima vinícola “Reichsgraf von @Kesselstatt”. . As uvas, 100% Riesling, vem de vinhedos localizados nas encostas ao redor de Wiltingen, cidade do Vale do Saar (um dos vales da famosa região do Mosel), com solos ricos em ardósia e calcário. São colhidas à mão, fermentadas com leveduras naturais e maturadas em grandes barricas de carvalho. . Na taça, tem coloração amarelo palha, com reflexos esverdeados. Ao nariz, mostra aromas de maçã, flores brancas, frutas cítricas e leve mineralidade (aguarrás). Na boca é seco, apesar de um discreto açúcar residual, graças à sua alta acidez. O corpo é médio-baixo e tem longa persistência de aromas cítricos e salinos. . Que vinho gostoso! Um Riesling do jeito que eu gosto, fácil de beber, com um delicioso equilíbrio entre acidez e açúcar, e com aquele toque petroláceo que eu adoro! Perfeito para peixes e frutos do mar. Foi uma noite de muito aprendizado, sob orientação do grande @Michael_Schutte_Vinho, e com a oportunidade de degustar 6 belíssimos Rieslings de diferentes regiões produtoras da Alemanha. 🇩🇪 . The Wittmann family has been growing grapes and producing wine in the small Rheinhessen village of Westhofen since 1663.
