These tofu quinoa fresh rolls are a delightful combination of flavors and textures, wrapped in a rice paper wrapper and served with an easy-to-make peanut sauce. They make a perfect appetizer or light meal for any occasion.
Ingredients: 150g tofu, thinly sliced. 1 cup cooked quinoa. 8 rice paper wrappers. 1 carrot, julienned. 1 cucumber, julienned. 1 avocado, sliced. 1/4 cup fresh mint leaves. 1/4 cup fresh cilantro leaves. 1/4 cup roasted peanuts, chopped. For peanut sauce: 1/4 cup peanut butter, 2 tbsp soy sauce, 1 tbsp maple syrup, 1 tbsp lime juice, 1 clove garlic, minced, 2-3 tbsp water.
Instructions: Soy sauce can be used to prepare tofu. It can then be baked or fried until golden brown. Let rice paper wrappers soak in warm water until they are soft. Then, lay them out flat on a clean surface. In the middle of each wrapper, put a small amount of cooked quinoa. Then, add slices of tofu, carrot, cucumber, avocado, mint, cilantro, and chopped peanuts. To make a spring roll, fold the sides of the wrapper over the filling and then roll it up tight. Add peanut butter, soy sauce, maple syrup, lime juice, minced garlic, and enough water to make the sauce thick or thin as you like. Add peanut sauce to the fresh rolls so that people can dip them in it.
