IMHO there is no better food than the potato. Period. End of story. And these French fries, with salt, pepper and a sprinkle of za’atar were absolutely perfect. They came with ketchup (BOO!) — ok I know I’ll get in trouble for that. But really, good French fries do not need ketchup. Maybe Mayo. Or aioli. Potato. We just got back from Belgium, where, when ordering dinner at a local restaurant I told the proprietor (who waited on us) that I didn't see french fries on the menu and did they have any? Her response (with a grin): "Madam, this is Belgium! We don't have to say....." and of course we got a platterful. The next day, we had cocktails and a snack at our hotel: french fries with truffles and Parmesan cheese. I would give a lot for some of these tomorrow (National French fries day). Unfortunately, I am no longer in Brussels. Sigh. I dream about these. French fries. These, with truffle and Parmesan cheese plus a side bit of mayonnaise NOT KETCHUP for a dab (tho not necessary).
