RECIPE: Peach Panzanella (from Forest Feast Gatherings by Erin Gleeson)
Cut 1 crusty baguette or half of a rustic French loaf into 1-in (2.5-cm) cubes. Lay out on a baking sheet & drizzle with 3 T olive oil & a sprinkle of salt.
Bake at 350°F (175°C) for 15 min. (can be done several hours in advance).
15 minutes before serving, combine toasted bread in a bowl with:
3 peaches, cubed
3 tomatoes, cubed
8 oz (225 g) fresh mozzarella, cubed
15 basil leaves, sliced
Then toss all ingredients with this vinaigrette (can be made the day before):
â…“ c (75 ml) olive oil
3 T red wine vinegar
1 clove garlic, minced
¼ t salt
¼ t pepper
Serve with more salt and pepper to taste.
This salad can be prepped in advance, but to ensure the bread soaks up the dressing while keeping some of its crunch, I suggest adding the bread and dressing to the other ingredients about 15 minutes before serving.Â
