Set Dosa, also known as Set Dosai, is a popular South Indian breakfast dish. These soft and fluffy dosas are best enjoyed with coconut chutney and sambar. They are easy to make and perfect for a hearty breakfast or brunch.
Ingredients: 1 cup rice. 1/2 cup urad dal split black gram. 1/4 cup poha flattened rice. 1/4 cup thick yogurt. 1/2 teaspoon fenugreek seeds. Salt to taste. Oil for greasing.
Instructions: Wash and soak the rice, urad dal, and fenugreek seeds in water separately for 4-6 hours. After soaking, rinse the poha in water and set it aside. Drain the water from rice and urad dal. Grind them together with poha, yogurt, and salt into a smooth batter. Transfer the batter to a large bowl and allow it to ferment overnight or for at least 8 hours. The batter should double in volume. Heat a non-stick or cast-iron skillet over medium heat. Grease it with a little oil. Pour a ladleful of batter onto the skillet and spread it in a circular motion to make a thin dosa. Drizzle a few drops of oil around the dosa. Cover and cook for a couple of minutes until the bottom turns golden brown. Flip the dosa and cook the other side until it's cooked through and crispy. Repeat the process with the remaining batter to make more dosas. Serve the set dosas hot with coconut chutney or sambar.
