August 23rd is fig day! Last year I was a little late on the fig harvest because of my vacation. This year, the fig harvest started later than usual.
My fig tree produces excellent figs. They are sweetest if they are allowed to crack a little while still on the tree.
Ingredients:
2 cups whole wheat flour
1 cup all purpose flour
2 tsp baking soda
1 tbsp cinnamon
1 tsp ginger powder
1 tsp nutmeg
1 tsp cloves
1/2 c butter
3 eggs
2 c mashed figs
1 c brown sugar
zest from 1 orange
Juice from half that orange
1/4 c yogurt
1/4 c milk
1 tsp vanilla
Instructions:
Preheat oven to 350° f
In a bowl sift together the flour, baking soda and spices (cinnamon, ginger powder, nutmeg, and cloves)
In a separate bowl combine milk, yogurt, orange juice, and vanilla
In a stand mixer cream together butter and sugar, once combined add figs, brown sugar and orange zest.
Add flour and milk mixtures to the stand mixer, alternating between the two
Portion batter into two 9x5 loaf pans
Bake for 45-55 minutes or until a tooth pick comes out clean
Notes:
This makes a dense pudding-like bread. You can add nuts for crunch. Or if you would like it to be sweeter (this bread is not very sweet, but I prefer it that way) you can add chopped dried figs, finely chopped candied ginger, or additional sugar.
I enjoy serving it as shown with dollops of yogurt and blueberry fig marmalade.

It's easy, it's tasty, it keeps well, it's home made - It's Fig Bread. The great thing about this recipe is that the ingredients have either a long shelf life, or you'll have them on hand meaning you can make this whenever you please.
Fig Bread
Effort: Simple
Serves: 8 slices
Ingredients:
2 tsp Mixed Spice
1 1/2 cup Plain Flour
1 1/2 cup Wholemeal Flour
1 cup warm Water
2 tsp dry Yeast
2 tblsp Sugar
1 tsp Salt
2 tsp Milk
2/3 cup Sultanas
1 1/3 cup dry Figs
Method:
Combine mixed spice, flours and salt in a bowl. Make a well in the middle and add the yeast, sugar milk and water. Allow yeast to activate.
Knead either by hand or machine. Leave in a warm draft free position for 30-40 mins. (I find on the cup warmer of the coffee machine is perfect)
Knock back the dough, knead and add dried fruits. Knead and shape until all dough is in desired shape and fruit is contained within dough. Allow to rise for 20-30 mins in greased bread tin in warm draft free position. Preheat oven at 200 degrees C.
Brush top with water and bake for 30 mins or until cooked.
To serve:
Cut it fresh out of the oven or toast and spread with butter. It goes great with a long black coffee.
Note: If you want a rustic looking loaf you can free-form this recipe. I would recommend after kneading through the dried fruit, roll in some semolina and leave to rise on some baking paper in a warm place. Cook on top of an oven/pizza stone.
