This chicken chili tastes great and is full of protein and fiber, so it's a healthy and filling meal. This dish is simple to make and great for busy days when you want a healthy dinner ready to go.
Ingredients: 1 lb boneless, skinless chicken breasts. 1 onion, diced. 1 red bell pepper, diced. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 1 can 15 oz diced tomatoes. 1 cup low-sodium chicken broth. 1 tbsp chili powder. 1 tsp cumin. 1/2 tsp garlic powder. Salt and pepper to taste.
Instructions: Place chicken breasts in the slow cooker. Add diced onion, bell pepper, black beans, corn, and diced tomatoes. Pour chicken broth over the ingredients. Sprinkle chili powder, cumin, garlic powder, salt, and pepper on top. Cover and cook on low for 6-8 hours or on high for 3-4 hours. Shred the chicken with forks before serving.
