Indulge in the flavors of the Caribbean with these oven-baked ribs glazed in a sweet and savory combination of dark rum and molasses. The addition of spices and a hint of thyme makes this dish a perfect centerpiece for a festive feast.
Ingredients: 2 racks of baby back ribs. 1 cup dark rum. 1/2 cup molasses. 1/4 cup soy sauce. 1/4 cup brown sugar. 3 cloves garlic, minced. 1 tablespoon grated ginger. 1 teaspoon ground allspice. 1 teaspoon smoked paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Chopped fresh thyme for garnish.
Instructions: Preheat your oven to 300F 150C. Prepare the ribs by removing the membrane from the back and seasoning with salt and pepper. In a saucepan over medium heat, combine rum, molasses, soy sauce, brown sugar, garlic, ginger, allspice, smoked paprika, and cayenne pepper. Simmer the glaze for 10-15 minutes until it thickens slightly. Allow it to cool. Place the ribs on a baking sheet and brush them generously with the prepared glaze, reserving some for basting later. Cover the ribs with foil and bake in the preheated oven for 2.5 to 3 hours, or until tender. Baste the ribs with the reserved glaze every 30 minutes during the baking process. Once done, remove the foil and broil the ribs for an additional 5-7 minutes to caramelize the glaze and create a sticky finish.
