Approximately 1.5 lb of free range elk osso buco, also known as leg shanks. Each order comes with 2-4 individually wrapped pieces. Elk is available in a wide range of cuts and preparations. It can easily be substituted for bison or beef in any recipe. Just like with bison, simply lower the cooking time – it cooks more quickly because it’s naturally leaner. It has a pronounced, clean and slightly sweet flavor that people adore. The elk osso buco is one of most popular cuts. Cook slow and low for 4-8 hours and allow the tender meat to fall right off the bone. Scoop out the bone marrow with a small spoon. A Julieshomebistro original! We cooked the elk tenderloins in the Instapot after seasoning and searing. Sauted the mushrooms and added it once the meat was finished. The aroma...and flavor...amazing!
