More bread! Again, Paul Hollywood's white bread recipe (trying to get it perfect) with rosemary this time. Added ten minutes to the bake time, which helped. Now I think the second prove needs to be longer.
I tried autolysis with this one, kind of, ok, I put all the stuff together (including the yeast, so it's not really autolysis) and then got too hungry and ate my lunch for 20 minutes and left it. The bread was so sticky! Distressingly sticky. Even after 15 minutes kneading it was still sticky.
It calmed down a bit after first prove, though it was still hard to shape, hence the somewhat collapsed ball.
Tastes all good though - dinner was half the loaf between the two of us plus scrambled eggs
I want to start using different flours again, but I also feel I should get the hang of one first?
