Eggs in a Nest are a healthy and delicious way to start the day that is great for people on a Whole30, paleo, or kid-friendly diet. In this recipe, sweet potatoes are used instead of grains to make grain-free nests that are still full of flavor.
Ingredients: 2 large sweet potatoes, peeled and grated. 4 large eggs. 2 tablespoons cooking fat e.g., coconut oil, ghee. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Start by heating the oven to 400F 200C. Warm the cooking fat in a big pan over medium-high heat. Grate the sweet potatoes and add them to the pan. Saut for five minutes, or until the potatoes start to soften and get a little crispy. Make four little nests in the sweet potatoes with a spoon. Be careful not to break the yolk when you crack an egg into each nest. Add salt and pepper to taste to the eggs. Place the skillet in an oven that has already been heated and bake for 10 to 12 minutes, or until the egg whites are set but the yolks are still runny.
