Ingredients: 6 large eggs. 1/2 cup cherry tomatoes, halved. 1/2 cup fresh mozzarella cheese, diced. 2 tablespoons fresh basil leaves, chopped. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, whisk the eggs until well beaten. Season with salt and pepper. Heat olive oil in an oven-safe skillet over medium heat. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften. Pour the beaten eggs into the skillet with the tomatoes. Sprinkle the diced mozzarella cheese and chopped basil evenly over the eggs. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the frittata is set and slightly golden on top. Remove from the oven and let it cool for a few minutes before slicing. Serve your Frittata Margherita warm and enjoy!
