This Easy Slow-Cooker Fire Roasted Pot Roast is a tasty and comforting meal that doesn't take much work. When you cook the chuck roast slowly over low heat with fire-roasted tomatoes, aromatic vegetables, and savory spices, it gets tender and juicy.
Ingredients: 3 lbs chuck roast. 1 can fire roasted diced tomatoes. 1 onion, chopped. 4 cloves garlic, minced. 2 carrots, sliced. 2 celery stalks, chopped. 1 cup beef broth. 2 tbsp tomato paste. 1 tbsp Worcestershire sauce. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste.
Instructions: Season chuck roast with salt and pepper. In a slow cooker, add chopped onions, minced garlic, sliced carrots, chopped celery, and fire roasted diced tomatoes. Place seasoned chuck roast on top. In a bowl, mix beef broth, tomato paste, Worcestershire sauce, dried thyme, and dried rosemary. Pour over the chuck roast. Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender and falls apart easily. Once done, shred the meat and serve with the vegetables and sauce.
