Ingredients: 4 fish fillets such as cod or tilapia. 2 limes, juiced and zested. 2 tablespoons olive oil. Salt and pepper to taste. 2 cups cooked rice. 1 cup diced pineapple. 1 red bell pepper, diced. 1 small onion, diced. 2 cloves garlic, minced. 2 tablespoons soy sauce. 2 tablespoons chopped cilantro. 1 tablespoon sesame oil. 1 tablespoon honey. 1 tablespoon rice vinegar.
Instructions: Preheat oven to 375F 190C. In a small bowl, whisk together lime juice, lime zest, olive oil, salt, and pepper. Place fish fillets in a baking dish and pour lime mixture over them. Let marinate for 10 minutes. Bake fish in the preheated oven for 15-20 minutes, or until cooked through. In a skillet, heat sesame oil over medium heat. Add garlic, onion, and bell pepper. Saut until softened. Stir in cooked rice, diced pineapple, soy sauce, honey, and rice vinegar. Cook until heated through. Serve the lime baked fish over the pineapple rice, garnished with chopped cilantro.
