Bowl of Warm Comfort: Orzo, Butter and Egg, with Veggies
Cheap, fast AND good
Put some orzo shaped pasta in a pot and just cover it with water. Turn heat on medium. Stir.
Add a big splash of tamari sauce, and a shake of onion powder, granulated garlic, and salt.
After a couple minutes, check to see if the water has been absorbed. If so, add enough more to just cover the pasta again, and stir.
About every 2 minutes, check the water level, add more if needed, and stir. The pasta should take 10 minutes to get plump and soft. Stirring to Bohemian Rhapsody and We Will Rock You/We are the Champions should about do it. Sing along loudly, but do not get distracted: if it sticks and burns, there will be sadness. (And that's stir from time to time, not continuously.) No splashing. (Hot!)
Meanwhile crack an egg or two into a cup and mix well with a fork.
When the pasta is cooked and the water absorbed, (about the end of We Will Rock You) turn off the heat and pour in the eggs, and a big pat of butter. Stir thoroughly but gently through We are The Champions (3 min) The residual heat will cook the eggs to creamy perfection.
Serve and enjoy.
Note: it ok to swap the water for broth, or the butter for margarine or olive oil. Yes, vegans can skip the eggs, but use more tamari for some umami, and maybe mix in some mushroom duxelles for more creaminess.
Optional extras: you can add a cup of frozen veg during the last few minutes of cooking before turning off the heat (about when Rhapsody ends, before Rock You). You can add some grated parmesan and/or shredded cheddar during Champions. You can add fresh black pepper, smoked paprika and/or a dash of hot pepper whenever it occurs to you, but I prefer to do that tableside so it's optional for whoever is eating with me.
If you are feeling congested, is also good to serve a scoop of orzo and egg with a ladle of soup poured over it.
