So obviously cosmetic ear cropping in dogs is unethical and hurtful, but what about ear taping? Are there any concerns for a dog's well-being if the ears are taped up to make them stand up, if the dog was originally floppy-eared?

It’s not detrimental to their health, but I find that it's not very effective either. if the dog will grow to have floppy ears, they might still flop even with taping. If the dog will grow to have standing ears, they will stand with or without the tape.
It doesn't hurt to try. So I see no reason to discourage it.
