Learn how to make delicious homemade dosa batter from scratch. This traditional South Indian recipe yields crispy and flavorful dosas that you can enjoy with a variety of accompaniments.
Ingredients: 1 cup of rice. 1/4 cup of urad dal black gram. 1/4 cup of chana dal split chickpeas. 1/4 teaspoon of fenugreek seeds. Water for soaking. Salt to taste.
Instructions: Rinse the rice, urad dal, and chana dal thoroughly in cold water. In a large bowl, combine the rinsed rice, urad dal, chana dal, and fenugreek seeds. Add enough water to cover the ingredients and let them soak for at least 4-6 hours, or overnight for best results. After soaking, drain the water from the ingredients and transfer them to a blender. Add some water, a little at a time, and blend until you get a smooth and slightly thick batter. The batter should not be too runny. Transfer the batter to a clean container, add salt to taste, and mix well. The salt helps with fermentation. Cover the container with a lid, leaving a slight gap for air to escape. Allow the batter to ferment in a warm place for 8-12 hours or overnight. The batter will rise and become airy. After fermentation, give the batter a gentle stir to mix any settled particles.
