On top of roasted garlic and thyme sauce, this tasty Potato and Pepper Pizza has thinly sliced potatoes and colorful bell peppers. The whole thing is baked to perfection on a crispy pizza crust. It's a tasty and different take on regular pizza.
Ingredients: 1 pizza dough. 2 large potatoes, thinly sliced. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1/2 cup roasted garlic thyme sauce. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1/2 teaspoon dried thyme. Salt and pepper to taste. Olive oil for drizzling.
Instructions: Preheat your oven to 475F 245C and place a pizza stone or baking sheet in the oven to preheat as well. Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the preheated pizza stone or baking sheet. Spread the roasted garlic thyme sauce evenly over the pizza dough, leaving a small border around the edges. Layer the thinly sliced potatoes evenly over the sauce, followed by the red and yellow bell pepper slices. Sprinkle the shredded mozzarella and grated Parmesan cheeses over the top of the vegetables. Season the pizza with dried thyme, salt, and pepper to taste. Carefully transfer the parchment paper with the assembled pizza onto the preheated pizza stone or baking sheet in the oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly and slightly browned. Remove the pizza from the oven, drizzle with a little olive oil, and let it cool for a minute or two before slicing.
