Ingredients: 2 leftover Thanksgiving biscuits. 2 eggs. 1/4 cup shredded cheddar cheese. 1/4 cup diced leftover turkey. 2 tablespoons diced green onions. Salt and pepper to taste. 1 tablespoon butter.
Instructions: Preheat your oven to 350F 175C. Split the leftover Thanksgiving biscuits in half and place them on a baking sheet. In a small skillet, melt the butter over medium heat. Add the diced turkey and green onions to the skillet and saut for 2-3 minutes until heated through. In a bowl, whisk the eggs and season with salt and pepper to taste. Pour the whisked eggs over the turkey and green onions in the skillet and cook until they start to set, stirring occasionally. Once the eggs are mostly cooked but still slightly runny, remove from heat. Spoon the scrambled eggs mixture onto the bottom halves of the biscuits. Sprinkle shredded cheddar cheese over the eggs. Place the top halves of the biscuits over the cheese, creating sandwiches. Bake the assembled biscuits in the preheated oven for about 5-7 minutes, or until the cheese is melted and the biscuits are heated through.
