A great vegetarian option is these crunchy eggplant sandwiches with a sour tomato-tarragon relish. Breadcrumbs and Parmesan cheese are used to cover the eggplant, which is then baked until it is golden. The peppery arugula goes well with the fresh tomato-tarragon relish, which adds a burst of flavor. Great for a quick and filling meal!
Ingredients: 1 large eggplant, sliced into rounds. 1 cup breadcrumbs. 2 eggs, beaten. 1/2 cup grated Parmesan cheese. 1/4 cup olive oil. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1 tablespoon chopped fresh tarragon. 2 tablespoons balsamic vinegar. 4 sandwich buns, split and toasted. 1 cup arugula leaves.
Instructions: Preheat the oven to 400F 200C. Season the eggplant rounds with salt and pepper. Dip each eggplant round into the beaten eggs, then coat with breadcrumbs mixed with Parmesan cheese. Place the coated eggplant rounds on a baking sheet lined with parchment paper. Drizzle olive oil over the eggplant rounds and bake for 20-25 minutes or until golden and crispy. Meanwhile, in a bowl, combine cherry tomatoes, tarragon, balsamic vinegar, salt, and pepper to make the relish. To assemble the sandwiches, spread the tomato-tarragon relish on the bottom halves of the toasted buns. Top with crispy eggplant rounds and arugula leaves. Cover with the top halves of the buns. Serve immediately and enjoy!

For Day 3 leading up to The Mandalorian and Grogu release, someone is using my Grogu blanket. This cutie here, Relish, "acquired" said blanket by giving me those sad puppy dog eyes once a while back.
