These Halloween Vegan Deviled Purple Potatoes are a spooky twist on a classic appetizer. The vibrant purple hue of the potatoes adds an eerie touch to your Halloween spread, while the creamy and flavorful filling will delight vegans and non-vegans alike.
Ingredients: 6 medium purple potatoes, halved. 1/4 cup vegan mayonnaise. 1 tablespoon Dijon mustard. 1 tablespoon lemon juice. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. Salt and pepper, to taste. Paprika, for garnish. Fresh chives, chopped, for garnish.
Instructions: Get the oven ready by heating it up to 400F 200C. On a baking sheet with parchment paper on it, put purple potatoes that have been cut in half. If you poke a potato with a fork, it should be soft after 25 to 30 minutes in the oven. Let the potatoes cool down a bit, then take out the flesh and put it in a mixing bowl. Leave a thin layer of potato skin on top. Put Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper in the bowl. Then add the vegan mayonnaise. Mix and mash until everything is well mixed. Put the mixture back into the potato skins and make a top that is round. Add paprika to the tops of each potato to make them look and taste better. Add some chopped fresh chives as a garnish. Serve right away or put in the fridge until you're ready to serve.
