Ingredients: 4 halibut fillets 6 ounces each. 2 tablespoons olive oil. 4 cloves garlic, minced. 1/4 cup fresh lemon juice. Zest of 1 lemon. Salt and pepper to taste. 2 tablespoons chopped fresh parsley.
Instructions: Preheat oven to 400F 200C. Place halibut fillets in a baking dish. In a small saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Remove from heat and stir in lemon juice and lemon zest. Pour the lemon garlic mixture over the halibut fillets. Season with salt and pepper. Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. Garnish with chopped parsley before serving.
