People have loved Shrimp Dumplings Ha Gao for a long time. You can see through these dumplings, which are filled with a tasty shrimp mixture. They are a great addition to breakfast or any meal.
Ingredients: 250g fresh shrimp, peeled and deveined. 1/2 cup cornstarch. 1/4 cup wheat starch. 1/4 cup tapioca starch. 1/4 cup hot water. 1 teaspoon sugar. 1/2 teaspoon salt. 1/2 teaspoon white pepper. 1 teaspoon sesame oil. 1 teaspoon vegetable oil. 1/4 cup diced bamboo shoots. 1/4 cup diced water chestnuts. 1/4 cup chopped cilantro. 1/4 cup chopped scallions. 1 tablespoon minced ginger. 1 clove garlic, minced. 1 tablespoon soy sauce. 1 tablespoon oyster sauce. 1/2 teaspoon fish sauce.
Instructions: Put cornstarch, wheat starch, and tapioca starch in a bowl and mix them together. Mix the starch and water together and stir until a dough forms. Work the dough around until it's smooth. Put sugar, salt, white pepper, sesame oil, and vegetable oil in a different bowl and mix them together. Together with the liquid mixture, add the dough and knead it until it is well mixed. Take a twenty-minute break. While that is going on, make the filling. Put shrimp, bamboo shoots, water chestnuts, cilantro, scallions, ginger, and garlic in a food processor and blend them together. Pulse until the food is very small. Put the shrimp mix in a bowl and add the fish sauce, oyster sauce, and soy sauce. Combine well. Use a round cutter to make circles out of the dough after rolling it out into a thin sheet. Filling shrimp should be put in the middle of each circle. To seal the edges, fold the dough in half to make a half-moon shape. For 8 to 10 minutes, or until clear and cooked all the way through, steam the dumplings in a bamboo steamer. Serve hot with the sauce of your choice.
