A delightful recipe for homemade dark chocolate thin mints that are even better than the store-bought ones. These minty, chocolatey treats are perfect for satisfying your sweet cravings.
Ingredients: 1 cup all-purpose flour. 1/2 cup unsweetened cocoa powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 large egg. 1/2 teaspoon vanilla extract. 1/2 teaspoon peppermint extract. 8 oz dark chocolate, chopped. 1 teaspoon vegetable oil. 1/4 teaspoon peppermint extract for chocolate coating.
Instructions: Mix flour, cocoa powder, and salt together in a bowl with a whisk. Mix the sugar and butter in a different bowl until they are light and fluffy. The egg, vanilla extract, and 1/2 teaspoon of peppermint extract should all be mixed in. Slowly add the dry ingredients to the wet ones and mix them together until they are all mixed in. Put the dough in the fridge for one to two hours after rolling it into a log shape. Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put the thin rounds of chilled dough on the baking sheet. For 10 to 12 minutes, bake. Place the cookies on a wire rack to cool down. Melt the dark chocolate and vegetable oil in turns in a bowl that can go in the microwave. Stir the mixture every 20 seconds until it is smooth. Put in 1/4 teaspoon of peppermint extract and mix it in. After the cookies have cooled, coat both sides with the melted chocolate and place them on a tray lined with parchment paper.
