Ingredients: 1 cup shredded coconut unsweetened. 1/2 cup almond flour. 1/4 cup coconut flour. 1/4 cup maple syrup. 2 tablespoons coconut oil melted. 1 teaspoon vanilla extract. 1/4 teaspoon almond extract. Pinch of salt. Dark chocolate for coating 70% cocoa or higher. Sliced almonds for garnish.
Instructions: Put shredded coconut, almond flour, coconut flour, maple syrup, melted coconut oil, vanilla extract, almond extract, and a pinch of salt in a bowl. Mix the ingredients together until they are well mixed. Put the mixture in the fridge for 30 minutes to make it easier to work with. Roll small amounts of the mixture into truffle balls that are easy to eat. Put them on a tray that has papers on it. You can use a double boiler or the microwave to melt the dark chocolate. Then, cover each truffle bite with the melted chocolate. To take them out, use a fork and let the extra chocolate drip off. Put the truffle bites that have been covered in chocolate back on the parchment paper. For decoration, sprinkle sliced almonds on top of them. Put the truffle bites back in the fridge for another 30 minutes, or until the chocolate coating is hard. Once the truffle bites are set, put them in a container that won't let air in and put it in the fridge until you're ready to serve them.
