Ingredients: 3 cups rolled oats. 1 cup raw pumpkin seeds. 1 cup chopped nuts e.g., almonds, pecans. 1/2 cup maple syrup. 1/4 cup pumpkin puree. 2 tablespoons coconut oil, melted. 1 teaspoon pumpkin pie spice. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup dried cranberries or raisins optional.
Instructions: Preheat oven to 325F 160C and line a baking sheet with parchment paper. In a large bowl, combine oats, pumpkin seeds, chopped nuts, maple syrup, pumpkin puree, melted coconut oil, pumpkin pie spice, cinnamon, and salt. Stir until well combined.
