Ok, so. This is a thing I must get off my chest in regards to cooking.
A molcajete is NOT a mortar and pestle. For the lingual nerds, technically this is squares and rectangles as a molcajete is a TYPE of mortar and pestle.
Molcajete is made of porous volcanic stone and is often wider than other mortar and pestles. They are ideal for flavor retention especially if used for the same type of dips/sauces. The rock also makes the ground food somewhat chunky. Molcajete are thirsty.
Wooden m&p can also absorb flavors/oil and are mildly thirsty. Do not use if you are not ready for cross contamination.
Ceramic(unglazed) m&p are somewhat rough, and thirsty. When glazed they are not thirsty and are easy to clean.
Metal and granite m&p are not thirsty, and can be throughly cleaned.
