Decided to make curry bread at 11PM. They turned out quite good! Here's how this mutt made these buns, for future reference because I can never find my recipe notes when I actually need them...
Dough Recipe: 3.5 cups flour 2.5 tsp instant yeast 1.5 tbsp sugar 1 tsp salt 1 cup Greek yogurt 1 tbsp melted butter 1 egg 0.25 cup warm water Mix the dry ingredients. Add the wet ingredients. Knead. Let rest in a warm area for about 90 minutes. Cut into 8, roll out into circles, put filling (in this case, Japanese curry with ground beef), seal up. Let rest for another 20 minutes. Apply egg wash, panko, various seasonings. Cook (375F for 18 minutes, broil for 1 at the end). Enjoy!
